Delicious Fillings
These are my most popular fillings and you can mix & match most of these with any of my sponges. I am always trying to create exciting new filling ideas so please contact me with your ideas
madagascan vanilla – I make all my sponge fillings with a vanilla based buttercream, which is creamed butter mixed with freshly sifted icing sugar & madagascan vanilla essence and combined with any of the following:
dark chocolate ganache – fresh double cream is poured over 70% cocoa solids melted dark chocolate which makes a smooth glossy & delicious ganache to combine with vanilla buttercream
chocolate & crystallized ginger – 60% cocoa solids dark chocolate & organic crystallized ginger chocolate is melted into vanilla buttercream
chocolate orange – dark chocolate ganache buttercream is combined with freshly squeezed orange juice & freshly grated orange zest
toasted pecan chocolate – toasted pecans are chopped and combined with dark chocolate ganache buttercream
espresso coffee / mocha espresso coffee – freshly made espresso coffee is combined with either madagascan vanilla or dark chocolate ganache buttercream
lemon curd – this light & creamy lemon buttercream is made with thick, tangy lemon curd combined with vanilla
lime zest – freshly squeezed lime juice is mixed with grated lime zest & lime oil
orange zest – the juice from freshly squeezed oranges and orange zest are combined with vanilla buttercream
baileys - delicious madagascan vanilla combined with decadent creamy original Baileys, or creme caramel Baileys
chocolate baileys - dark chocolate ganache buttercream combined with original Baileys, or Mint Chocolate Baileys
toffee - rich toffee made from delicious golden syrup and muscovado sugar combined with madagascan vanilla
